Classic Braised Cow Tail Recipe
Ingredients:
1 kg Cow Tail (cut into segments)
2 tbsp oil
1 large onion (chopped)
3 garlic cloves (minced)
2 carrots (chopped)
2 celery stalks (chopped)
2 bay leaves
1 tsp thyme
1 cup red wine (optional)
4 cups beef stock
Salt & pepper to taste
Instructions:
Sear the meat: Heat oil in a large pot and brown the cow tail pieces on all sides. Remove and set aside.
Sauté aromatics: In the same pot, cook onions, garlic, carrots, and celery until softened.
Deglaze: Add red wine (if using) and scrape up any browned bits.
Simmer: Return the cow tail to the pot, add bay leaves, thyme, and beef stock. Bring to a boil, then reduce heat to low.
Slow cook: Cover and simmer for 2.5–3 hours until the meat is tender and falling off the bone.
Season & serve: Adjust salt and pepper to taste. Serve with mashed potatoes, rice, or crusty bread.
